- 21 grams honey 1 Tbsp
- 3 grams yeast 1/2 tsp
- 484 grams all purpose flour
- 1 large egg

Combine the warm water, honey and yeast in the bowl on a electric mixer and stir.

Cover with plastic wrap and let rest for about 45 minutes - 1 hour, or until the dough has roughly doubled in size.
Divide into 16 equal portions weighing about 50 grams each. Working with 1 piece at a time, roll into a ball, and place on a sheet pan covered with parchment paper or silicone mat. Leave about 2 inches between each roll.
Cover with plastic for a 2nd rise, approximately 30 - 45 minutes. They don't need to fully double in size.
Preheat oven to 350. Bake for 18-20 minutes, until very lightly golden (not brown).
Optional: Take a piece of butter and gently rub it over the tops of the warm mini burger buns to add a sheen and keep the buns moist. It takes about 3 grams of butter.
