See you late winter, spring is here and the grill is being fired up! I don’t know about you, but the sound of lawnmowers and the smell of meat cooking screams summer happiness.

It’s not quite summer, but it’s always time for mini hamburgers. And delicious mini burgers need the best mini burger buns! This recipe is super easy and fast. My favorite kind! It comes together in about 2 hours.

Mini or Full Sized Burger Buns

This recipe is versatile and can be used to make a number of different buns / rolls / sliders / subs / hoagies…

Divide the dough into 8 sections and you can make large hamburger buns, or roll the dough long and you have a large sub or hoagie rolls.

Divide into 12 sections for regular hamburger buns or when you’re feeding a crowd.

When you stick to 16, you get mini burger buns! One recipe, lots of options!

#1 Tip for Baking Bread

The most important part of bread baking is measuring. And as somehow who has stood by measuring cups for 20 years, I can say it’s vital to ditch the measuring cups and get yourself a kitchen scale.

I bought mine years ago and it’s still going strong. The one linked above is on sale for $10. It’s a cheap investment and worth its weight in gold.

When baking bagels, bread, and all things sourdough, a scale will never let you down. All the guesswork is taken out of baking when using exact measurements.

I’ll include standard cup measurements, but I encourage you to get a scale and use it every time you bake! You will be amazed. And aside from it being precise, it’s faster! That alone is reason enough to make the switch.

How to Make Mini Burger Buns

I want to take a few moments and walk you through how to form the mini burger buns.

Now in all honesty, my 4 year old helps to roll these buns so you don’t have to worry about being too precise. You can just divide the dough and give them a quick roll. Presto you’re done.

But, if you like uniformity in how they look, then you can follow the steps below. If you don’t care, or if you’re in a rush, then rolling them into a ball and moving on will get the job done!

Forming the Mini Burger Buns

Divide the dough into 16 equal parts (roughly 50 grams a piece). I like to cut the dough in half, then working with each half, cut into quarters, then cut each piece in half again.

Working with 1 piece at a time, flatten the dough out a bit. Pull the edges into the center all the way around and pinch the edges together in the middle.

Turn the ball over, cup the dough and slide it against the counter so the bottom seals itself. You can do a quarter turn, 4 times, to make a nice little ball.

Again, this isn’t necessary. This has become my go-to method for forming dough into balls.

But again, you can just roll the pieces into balls and place them on parchment/silicone mat to bake. I can fit all 16 on one baking sheet.

Mini Burger Buns

Ingredients
  

  • 240 grams warm water (not super hot, not super cold)
  • 21 grams honey 1 Tbsp
  • 3 grams yeast 1/2 tsp
  • 484 grams all purpose flour
  • 1 large egg
  • 4 grams sea salt

Instructions
 

  • Combine the warm water, honey and yeast in the bowl on a electric mixer and stir.
  • Add in the flour, egg and salt, and with the hook attachment, knead for 5 minutes.
  • Cover with plastic wrap and let rest for about 45 minutes – 1 hour, or until the dough has roughly doubled in size.
  • Divide into 16 equal portions weighing about 50 grams each. Working with 1 piece at a time, roll into a ball, and place on a sheet pan covered with parchment paper or silicone mat. Leave about 2 inches between each roll.
  • Cover with plastic for a 2nd rise, approximately 30 – 45 minutes. They don't need to fully double in size.
  • Preheat oven to 350. Bake for 18-20 minutes, until very lightly golden (not brown).
  • Optional: Take a piece of butter and gently rub it over the tops of the warm mini burger buns to add a sheen and keep the buns moist. It takes about 3 grams of butter.
