I started making my baby banana pancakes 6 years ago when my oldest was just 18 months old. And when my youngest turned just 6 months old and started baby led weaning, one of the first foods I gave her was these banana pancakes.

Fast forward 6 years and my 7 1/2 year old is still eating these banana pancakes alongside her 4 year old sister, and we have no baby in sight! Both girls ask for “green pancakes” on a regular basis. And I always deliver. For 2 picky eaters, I’m happy to serve them oats, milk, bananas, flax seed, cinnamon, and spinach. That’s it! That’s your ingredient list. If you want to throw in 1 teaspoon of vanilla, go ahead! I do maybe half of the time, but the kids don’t notice one way or the other.

Quick and Easy

I want to give you a slight “warning” first. For kids that are used to Bisquick-type pancakes, this recipe may take some getting used to. I’m not knocking boxed pancakes, this is just what I’ve found over the years with family and friends who have been at our house and tried our banana pancakes recipe.

My girls started eating these as babies and so these ARE pancakes to us.

No flour, sugar, or salt. Just the good stuff we moms want our babies/toddlers/kids to eat. Hell, it’s how I want to eat, but don’t always make that choice:) Anyone else with me?!

Pancake Batter Readiness

The batter will look more liquid than pancake batter-like at first. Once it’s blended, turn on your griddle, and by the time it’s hot, your batter should resemble a standard pancake batter-like consistency…only with ground flax seed bits.

I have found the best way to determine readiness is to slide a spatula under the edge of a pancake, and if it slides under easily, it’s time to flip. They are done when lightly brown on the edges, but still obviously green.

Make them big, small, or anywhere in between!

Do you always have spinach at the ready? I didn’t before I started freezing bags of spinach. Buy your spinach as you normally do…fresh, bagged, boxed, however. Make sure it’s clean and then place it in a sealed bag or container and keep it frozen. I take my spinach straight from the freezer and put it directly into the blender. That’s usually my 4 year olds job…she gets to jam as much spinach as she can fit into the blender!

How to Use Banana Pancakes for Baby in Your Day

  • Fresh from the stovetop with maple syrup, obviously
  • Cooled down and served as finger food, cut into sticks or made into small circles, to a baby learning to eat solids (check with your pediatrician)
  • As on the go snacks stashed in your diaper bag/purse (This was my go to snack/lunch on the go for my girls for years)
  • After school snack as left overs straight from the fridge (my 7 year will crush these after school).
  • Smeared with peanut butter or nut butter
  • Topped with whipped cream

Banana Pancakes for Baby

Bananas, oats, milk and spinach are blended together to make banana pancakes for your baby a nutritious, hot meal at home or a cold snack on the go.
If you're trying out baby led weaning, these are a must-try finger food!
Quick and easy, you can make these for breakfast, lunch, or dinner.

Ingredients
  

  • 1 cup oats
  • 1 cup milk (dairy, almond, soy, lactose free, your choice) I use Fairlife as it's lactose free and has 13 g of protein in 1 cup
  • 1 cup spinach
  • 1 tbsp ground flax seed You can omit this if you don't have it. It's just a boost in nutrients.
  • 1 banana Any size banana, brown or yellow, both work, too!
  • 1 tsp cinnamon

Instructions
 

  • Combine all of the ingredients in a blender and blend for about 45 seconds.
  • Stop the blender around 20 seconds in, and start again, to incorporate any bits it may have left out.
  • Once the batter is mixed, preheat your pan. Spray with non stick spray or a bit of olive oil.
  • Make about 8 or 9 four inch pancakes, or more smaller pancakes.
  • To tell when they're ready to flip, gently slide your spatula under an edge and give it a wiggle. If the pancake shifts, flip it. If not, wait a few more seconds and try again.

Notes

The banana pancakes batter will seem a bit too liquid at first.  By the time your pan heats up, the oats will have soaked up some of the milk and the mixture will have thickened.
If you get delayed in cooking the pancakes and the batter is too thick, add a splash of milk and blend again for 10-15 seconds.  You should be good to go!
